Crunchy Thai Salad

This Thai salad has a crisp texture, satiating quality, and nutrient-rich composition, and is a delectable and effortless way to maintain a healthy diet. The salad is tossed in a creamy peanut dressing that imparts a robust flavor to each bite. The salad comprises a variety of superfoods: thinly sliced kale, red bell peppers, red and napa cabbage, and carrots. The addition of fresh mint leaves and sliced green onions lends an enticing herbaceous aroma to the salad. The natural sweetness of the fruit and sweet peppers serves to balance the bitterness of the kale, resulting in a harmonious flavor profile. Feel free to add in your favorite protein, such as grilled chicken or shrimp.


Peanut dressing:

  • cup creamy peanut butter

  • 2 tbs lime juice

  • 3 tbs honey

  • 1 ½ tbs rice wine vinegar

  • 1 ½ tbs soy sauce

  • 1 tsp sesame oil

  • 1 tsp sriracha

  • ½ tsp minced ginger

  • 1 tbs water

Thai Salad

  • 2 cups sliced kale

  • 1 ½ cups sliced napa cabbage

  • 1 ½ cups sliced red cabbage

  • ½ cup sliced red bell pepper

  • ½ cup shredded carrot

  • ¼ cup cilantro

  • 8 mint leaves

  • 1 tbs sliced green onions

  • ¼ cup peanuts, roasted and roughly chopped


In a large bowl add the slices of kale, cabbage, bell pepper, carrot, cilantro, mint, and green onions. Set aside. in a separate bowl, whisk together the dressing ingredients. You can also use a blender if you'd like it completely smooth. Add additional water in to thin the dressing if desired.
